Taggiasca olives are small, unlike many other Mediterranean varieties, but the cooler climate in which they grow allows for a more subtle flavor with floral notes. The oil is cold-pressed and bottled unfiltered to best retain its unique flavor.
Our family uses this versatile oil to cook, finish dishes, dress salads or simply as a bread dip. Its low-acidity profile makes it easy to use in everyday cooking to bring out the best flavors from all ingredients.

Taggiasca olives are grown in Liguria on the hilly coastline between France and Tuscany. Our oil comes entirely from within the Province of Imperia.
Olives have been cultivated here for centuries. Due to the terrain, it is virtually impossible to use heavy machinery, and most of the work from pruning to harvest is done by hand.

For almost two decades, Carlo Brasca and Angiola Carrara have been bringing a few bottles a year of their oil to the US for personal use and as valued gifts to family and friends.
The olives are harvested, pressed & bottled by Fabio Freri and his partners at Azienda Agricola Leoni. Fabio also maintains the orchards on our family property. The olive oil is imported in collaboration with David Andrighetto and his company Shasta Produce.
In 2020, after a lot of planning and paperwork, we started importing under the Brasca Olive Oil label.
